Sometimes you just need something with a bit of substance. For breakfast I generally just have coffee and a banana—but on occasion I want some “food,” you know?
This dish is perfect for kids. If your child eats eggs, then slowly start to incorporate the other ingredients and adjust accordingly—aka less salsa and more avocado etc.
This breakfast go-to is also great even if your child does not eat eggs—just make it heavier on the avocado and tomatoes or use chicken sausage instead so your kid still gets that protein 🍳
2 eggs, fried over easy or scrambled
1/4 cup tomatoes, diced
1 tbsp red onion, chopped
1/2 avocado, chopped
1-2 tbsp Salsa
Chili Powder, just a dash!
Sea Salt and Pepper, to taste
